ARUGULA SALAD AND ORANGE VINAIGRETTE

Arugula Salad
1 head lettuce, cleaned, dried, and chilled
1 bunch of arugula, coarsely chopped
4-5 turnips, thinly sliced, or 10 radishes thinly sliced
3 tablespoons minced scallions
freshly ground pepper
Orange Vinaigrette:
2 tsp. grated orange (rind) zest
1/2 cup orange juice
4 tbsp. red wine vinegar or rice vinegar
2 medium cloves garlic, finely minced
1 tsp. salt
1/2 cup extra virgin olive oil
Combine in jar with tight lid. Shake well.
