MUSTARD VINAIGRETTE

This dressing is great on green salads or boiled beet salad with
maple-toasted walnuts and goat cheese.

½ cup apple cider vinegar
½ cup olive oil
¼ cup honey
¼ cup yellow or Dijon mustard
Salt and pepper to taste

Whisk all ingredients in a jar and dress salad.  You may need to re-whisk
if the mixture sits and separates.
