BABY GREENS SALAD WITH BEETS

A favorite around the Worden Farm crew kitchen
Ingredients:
Baby Greens
Beets
Goat Cheese
Walnuts, whole or chopped
Balsamic Vinaigrette
Directions
Cut tops off beets, and reserve for another use. Cover beets with
water and boil until you can easily stick a fork into them. Drain and
soak in cold water. When the beets are cool enough to handle, easily
remove their skins by rubbing them with your hands. Slice beets into ¼
inch slices.
Dress baby greens with sliced beets, walnuts and crumbled goat
cheese and top with balsamic vinaigrette (from last week’s
newsletter). This salad is delicious and absolutely beautiful!
