BRAISED BEETS

3-4 large beets, grated
½ head of cabbage, grated
10-12 cherry tomatoes, halved
¼ cup minced fresh herbs
½ cup basalmic vinegar
Olive oil
Salt and pepper to taste

Cover bottom of large skillet or wok with olive oil and put on medium
heat. Add cabbage and herbs, cook about 5 minutes. Stir in beets,
tomatoes, and vinegar and let cook until beets are tender, about 20-30
minutes. Add salt and pepper or vinegar to taste and enjoy alone or
over rice as a colorful, tasty side dish.
