“Make as little or as much as you want of this delicious and colorful
salad!”
Beets
Lettuce
Orange sections
Goat cheese crumbles
Olive oil
Balsamic vinegar
Orange juice
Pecans or walnuts
Wrap each beet in foil with a drizzle of olive oil. Bake at 350 for
about 45 minutes. Remove from oven, cool for a few minutes, and slip
off skins. Dice beets and arrange on lettuce with orange sections and
goat cheese. Dress with olive oil, balsamic vinegar, and orange juice
and sprinkle with crushed pecans or walnuts
