THAI COCONUT MILK BONIATO
From Ju Boontung of Thailand, a past Worden farm apprentice

2-3 lbs. (approx. 1 qt) boniato
2 12oz. cans of coconut milk
1/3 cup brown sugar (or more)
salt to taste

Pour coconut milk into large pot.  Mix in brown sugar.  Peel boniato
and cut into 1 inch cubes.  Place boniato in coconut milk immediately,
and boil, stirring occasionally.  Remove from heat when cooked to
desired tenderness.  Serve warm as a desert or as a sweet side dish,
use salt to taste.
