Adapted from How to Cook Everything Vegetarian. Amounts can be
adjusted to taste.
1 qt broccoli
1 cup Ricotta cheese
4 Tbsp olive oil
A pinch of nutmeg
Grated Parmesan cheese, for garnish
First cook broccoli until tender, by steaming, boiling, or sautéing.
Combine with Ricotta, oil, and nutmeg in a food processor, and garnish
with Parmesan. Serve as a side dish. Can be made up to 2 days in
advance and reheated.
To make a gratin, put the purée in a greased shallow baking dish,
sprinkle with bread crumbs, dot with butter or drizzle with olive oil,
and bake at 375 until hot and bubbly.
