Rapini (Broccoli Raab)
2 tsp. olive oil
3 cloves garlic, minced
1/2 Parmesan cheese
salt and pepper, to taste
In a pot of salted water, boil rapini for approximately 3 minutes, then
drain. This step is optional, but recommended, as it will extract any
bitterness from the rapini, revealing its excellent flavor.
In a skillet, saute garlic and olive oil until brown. Add rapini, toss and
remove from heat.
Place sauteed mixture in a baking dish; sprinkle Parmesan cheese on
top and bake at 350 degrees for 10 minutes.
