ST. PATRICK'S DAY CABBAGE

1 head of cabbage, sliced and diced
6 scallions, chopped
½ cup parsley, minced
olive oil
3 red heart radishes
Place cabbage in a deep saucepan and stir in olive oil to coat the
cabbage lightly. Cook over medium heat, covered. Add water as
needed to prevent the cabbage from sticking to the pan. After about 5
minutes, add the scallions and parsley. Continue cooking until very
tender, about 15 minutes. Serve garnished with sliced raw red heart
radishes.
