Freshly-dug carrots have an earthy, sweet flavor. It is fun to dig
carrots. You pull them up from the base, and they gently slide up
out of the earth. Carrot sticks are a classic lunch box snack. They
pack well, and offer good crunch and nutrition at midday. To
roast carrots, coat them with some olive oil, and place in a 400
degree oven until tender and caramelized.
