CARROT SALAD
1 bunch carrots
1 tsp wine vinegar or cider vinegar
2 tsp lemon juice
salt
freshly-ground pepper
¼ cup olive oil

Peel and grate the carrots. Make the vinaigrette by stirring together in
a small bowl the vinegar, lemon juice, salt, and pepper. Whisk in the
olive oil. Taste and adjust as necessary.

Toss the carrots with the dressing. Let the salad stand for 10 minutes.
Taste again and, if needed, add more of any ingredient to taste.
