Tasty as a side dish, or use as a topping for potatoes or meat dishes.
Peppers
ShiItake mushroom caps
Olive oil
Salt and pepper
Chives or scallions, chopped
Slice peppers and mushrooms into 1/4 –inch strips. Heat a sauté pan to
medium-high heat. Add enough olive oil to cover the bottom of the
pan. Add peppers to the pan, and cook, stirring frequently. When
peppers begin to soften, add mushrooms and lower heat slightly.
Continue to cook, until mushrooms and peppers are soft. Add salt,
pepper, and chives to taste, and serve hot.
