CILANTRO RICE

3 cups vegetable broth or water
1 ½ cup brown basmati rice
1 ½ Tbsp grapeseed or olive oil
½ tsp salt
1 ½ cup chopped fresh cilantro                                      1 tsp lemon
juice                                     Freshly ground black pepper to taste
Combine broth, rice, and oil in medium saucepan and bring nearly to a
boil over high heat. Reduce to a simmer, cover, and cook about 50
minutes or until liquid is absorbed and rice is tender. Remove from
heat and let stand 10 minutes. Season with salt and pepper. Add
cilantro and lemon juice and fluff rice with fork.
