SCALLION AND ORANGE SALSA

½ cup minced scallions
3 medium oranges
 peeled, seeded, and diced
2 tsp. cilantro
1 ½ Tbsp. finely chopped chile
  Pepper (or more or less to taste)
¼ tsp. ground cumin

   Put the chopped scallion in a strainer and run under cold water.  
Drain well. Stir all the ingredients in a medium bowl. Serve immediately
or cover and refrigerate for up to 1 day.
