CILANTRO SPREAD

Great on rice or rice noodles.

2 packed cups finely chopped fresh cilantro
2 cloves garlic, minced
Finely grated zest of one lime
½ cup olive oil
1 Tbsp. freshly squeezed lime juice
1 tsp. finely chopped or grated fresh ginger

Combine all ingredients. Season with salt and pepper to taste. Serve
immediately or refrigerate and serve within 2 days.
