DUTCH STYLE COLLARDS AND SMOKED
SAUSAGE

1 bunch collards, stemmed and chopped
1 lb smoked sausage
6-7 potatoes, peeled and chopped
1 Tbsp margarine or butter
½ cup to 1 cup milk                                      1 Tbsp ground
nutmeg                             Salt and pepper to taste
Boil potatoes in salted water until tender. Drain and mash well with
margarine or butter, milk, and salt and pepper. Meanwhile, combine
collards, sausage, and a bit of water in a large saucepan, cover and
simmer until greens are tender. Add cooked collards to mashed
potatoes and mix well. Mound mixture onto a platter, sprinkle with
nutmeg, and surround with sausage. Serve with leftover broth and
spicy mustard for the sausages. For a meatless dish, omit sausage and
top with sharp grated cheese.
