2 cucumbers, peeled and cut
into chunks
2 cloves garlic, peeled and minced
1 bunch scallions chopped
(substitute with ½ an onion if you
have other plans for your scallions)
4 - 6 Basil tops- pick off leaves and
chop
1 Tablespoon soy sauce
½ teaspoon celery seed
juice from 1 lemon
a dash of hot sauce (optional)
Place all the ingredients in a blender or food processor. Blend until
smooth. Serve chilled over salad.
