RADISH HASH BROWNS

A low-carb alternative to potato hash browns, with a unique flavor.
This recipe can be used with any type of radish – round red, French
breakfast, even daikon.

1 Tbsp butter or bacon drippings
half a small onion, diced
1 bunch radishes, trimmed and diced
salt & pepper to taste
1/4 tsp dried thyme
paprika if desired

Sauté onion in the butter until soft, then add the radishes. Cook over
medium heat until crisp outside, and soft inside, about 8 minutes. Add
seasonings near end of cooking time. Sprinkle with paprika just before
serving.
