The flavors and textures of these vegetables make them excellent
complements in many recipes. Here are some of our favorites!
• Toss ½-inch cucumber cubes with salt to “sweat” for 30 minutes
before patting dry and adding to plain yogurt, chopped dill, and
roasted cumin seeds for a cool side dish similar to Indian ‘raita’
• Chop cucumbers and tomatoes in 1-inch cubes, toss with apple
cider vinegar, olive oil, and chopped dill, adding chopped onions for a
kick
• Slice cucumber into thin rounds, toss with salt to “sweat” for 30
minutes; spread cream cheese or butter mixed with minced dill on
whole grain bread, pat cucumbers dry, and spread over bread to create
lovely tea sandwiches
