GRILLED EGGPLANT SANDWICHES
Here, grilled eggplant slices are used instead of bread for the outer
layer of sandwiches. Worden Farm apprentices Jenny Styer and
Brendan Tuckey made this dish on the farm last week. Use each
ingredient in the amount that pleases your palate.  

Eggplant
Olive oil
Salt
Black pepper
Garlic, minced
Herbed soft cheese, such as cream cheese or chevre (soft goat cheese)

Slice eggplant on an angle, to make oval slices, about half an inch thick.
Marinate eggplant slices in olive oil and garlic. Sprinkle with salt and
pepper. Spread herbed goat cheese between slices of eggplant to
make sandwiches. Place sandwiches on a medium-hot grill. Flip when
the first side is done, then remove when the other side is finished.
Serve warm.
For an extra touch, add a slice of oven-roasted or dried tomato on top
of each sandwich.
