OVEN FRIED EGGPLANT

1/2 cup fat-free mayo
1 tbsp. minced onion
1 eggplant, unpeeled, sliced into 1/2 inch slices
1/3 cup fine dry breadcrumbs
1/3 cup grated parmesan cheese
1/2 tsp. dried Italian seasoning
vegetable oil

Combine mayo and onion. Spread over both sides of eggplant slices.
Combine breadcrumbs, cheese, and seasoning in a shallow bowl.
Dredge eggplant in breadcrumb mixture. Place eggplant on a baking
sheet that has been coated in vegetable oil. Bake at 425 degrees for 12
minutes. Turn eggplant over and bak ean additional 12 minutes, or until
golden.
