PEPI'S EASY EGGPLANT
This dish, made by Pepi, Eva’s mother, was a big hit at the pot-luck.
      
Makes 2-4 servings

2 Asian eggplants cut into ½ inch
    cubes, you may leave the skin
2 tomatoes cubed, similar to the
    eggplant
4 scallions chopped
¼ cup chopped basil
Olive oil
Grated Parmesan Romano cheese

    Mix the first 4 ingredients in a microwaveable baking dish. Top with
olive oil and and mix well again. Sprinkle grated Parmesan Romano
cheese and microwave for 3-5 minutes.  Mix and microwave for another
3-5 minutes, or to desired tenderness.
