Escarole is one of the three main types of endive which also
includes Belgium endive and curly endive.  This dark leafy
green vegetable can be used as a salad green or cooked and
eaten as a vegetable side dish or added to soups. Escarole
contains only 20 calories and has 65% of the recommended
daily allowance of vitamin A.
