8-10 cups water
1 bunch greens (e.g. topper, kale, collards), washed and coarsely
chopped
½ head garlic, minced
1 cup minced onion greens
1 lb firm tofu, cut in small cubes
5-6 tablespoons miso
3 tablespoons olive oil
Crushed red pepper to taste
Salt or tamari sauce to taste
In large pot, bring water to boil and add miso, stirring until completely
dissolved. Add all other ingredients and cook on medium heat for 30
minutes or until greens are tender. Enjoy piping hot!
