How to prepare lettuce: Gently tear off the leaves, and place in a
salad spinner. Fill with water, gently swish, then lift the colander
portion and dump the water from the salad spinner bowl. Repeat
until there is no sand left in the bowl, then spin dry, and dump
out the water that spins to the bottom. Refrigerate, in the salad
spinner or in a plastic bag with a dry dish towel.
