Florida Avocados have a lighter flavor than California varieties and
are lower in calories and fat.
Cilantro looks like light green parsley. It is fragrant and delicious in
savory dishes. Cilantro is a staple herb in Asian and Latin cuisines. Try
it minced over soups or beans and rice. It also is great in guacamole or
salsa.
Ingredients:
1 large avocado
juice of lemon (a squeeze or three)
2 tablespoons minced onion
2 tablespoons minced cilantro
1 clove of smashed, chopped garlic
1/2 diced tomato
salt to taste
pinch of cayenne pepper
1teaspoon ground cumin
Directions:
In a small bowl, smash the avocado using a fork and a spoon. You can
use a processor if you want it commercially smooth. Mix the rest of the
ingredients into the avocado mixture, store in a covered container for
not more than an hour before you plan to use it. After you've made
this a couple of times you can gauge how much tomato, garlic, cilantro,
onion, pepper you actually want in your recipe.
