ORANGE VINAIGRETTE

Makes 1/3 cup

¾ tsp orange zest
¼ tsp salt
2 Tbsp. freshly squeezed orange
    juice
3 Tbsp. olive oil
½ teaspoon finely minced herbs
  (optional)

     Mix the zest, salt, and juice briefly with an immersion blender,
food processor, blender, or whisk. Slowly add the oil in a stream until
emulsion forms. Add remaining oil faster, but still in a stream. Taste to
adjust the salt and add ore oil if needed. Let sit to develop the flavor;
if you are serving immediately, you may want to add a bit more juice to
sharpen the flavor.
