YELLOW BEAN AND POTATO SALAD
|
2 lbs potatoes
3/4 lb yellow wax beans
¼ cup scallions
2 Tbsp. olive oil
1/3 tsp. lemon zest
Boil potatoes in water until tender. Drain and dice potatoes. Trim and
slice beans into pieces. Boil beans in water until tender-crisp. Drain.
Toss together in a large bowl.
