NEW POTATO HALVES WITH SHRIMP AND FETA TOPPING

Makes 4 servings
1 pint new potatoes
Topping
8-10 cooked medium shrimp
¼ cup crumbled feta cheese
1 tsp. lemon juice
1 tsp. sour cream
1 tsp. drained capers, rinsed
In a pot, cover the potatoes with water and bring to a boil over high
heat. Lower the heat, cover, and simmer 15-20 minutes, or until
tender. Remove the potatoes from the heat, drain, and let cool.
For the topping, place the shrimp, cheese, lemon juice, and sour
cream in a food processor. Purée at high speed until smooth. Add the
capers and process briefly, just long enough to blend them in.
Cut the potatoes in half a spread topping over potatoes. Serve at room
temperature.
