1 quart red potatoes
Olive oil
¼ cup flour
2 Tbsp grated Parmesan cheese
4 Tbsp minced parsley
Salt and pepper
Preheat the oven to 375 degrees F. Peel and quarter potatoes. Toss
with olive oil to coat. Combine flour, Parmesan cheese, and parsley in a
medium bowl. Add potatoes and toss to coat. Place in a single layer in
baking pan. Bake one hour, or until tender. Stir once or twice while
baking. Remove from oven and sprinkle with a little more Parmesan
cheese.
