PARSLEY RED SKIN POTATOES

2 lb red skin potatoes
3 Tbsp butter
2 Tbsp chopped fresh parsley
1/4 tsp salt (optional)
1/8 tsp pepper
Pare a strip from the center of each potato. Heat 1 inch water (salted
if desired) to boiling in 3 quart saucepan; add potatoes. Cover and heat
to boiling; reduce heat. Cook 20-30 minutes or until tender; drain. Heat
butter until melted. Stir in remaining ingredients. Pour over potatoes;
stir gently.
