3 medium potatoes, finely sliced or grated
2 Tbsp flour
¼ tsp salt
1 egg
1 Tbsp oil
1 green pepper, sliced or chopped
½ cup shiitake mushrooms, sliced
½ cup leeks, sliced or chopped
1/3 cup tomato sauce
1/3 cup mozzarella cheese
Mix potatoes, flour and salt in a bowl. Add the egg and stir. Heat oil in a non-
stick frying pan on medium high. Add potato mixture and cook both sides until
light brown and crusty. Add on top of crust peppers, mushrooms, and leeks.
Cover with tomato sauce, sprinkle with cheese, and simmer, covered, for 5-7
minutes.
