MUSHROOM GODDESS DRESSING

The creamy, herby “Green Goddess” dressing was invented at the
historic Palace Hotel in San Francisco in the 1920's in honor of William
Archer's hit play The Green Goddess. It enjoyed great success,
especially in California, for decades. Worden Farm’s adaptation of this
classic uses tasty shitake mushrooms in place of anchovies, and low-fat
yogurt and cream cheese instead of mayonnaise and sour cream.
1 cup low-fat yogurt
½ cup cream cheese
¼ cup minced scallions
¼ cup minced fresh parsley
2 tablespoons fresh lemon juice
3 shitake mushrooms, rinsed, patted
dry, and minced
salt and freshly ground pepper to taste
Stir all the ingredients together in a small bowl until well blended.
Serve cold.
