SAUTEED SWISS CHARD WITH OLIVES
4 cloves fresh garlic
¾ teaspoon salt
3 tablespoons fresh lemon juice
4 tablespoons extra virgin olive oil
1 bunch Swiss chard
½ cup chopped olives

1.        Mash garlic and salt into a paste, whisk in lemon juice, then
drizzle and whisk in oil.

2.        Cut chard leaves off stem, chop into large bite-size pieces, and
place in a large bowl of cold water to rinse. Place chard in large pot or
skillet and cook in the water clinging to the leaves over medium heat
for 3 to 4 minutes, or until chard is wilted and bright green. Stir
frequently to push uncooked leaves to the bottom.

3.        Toss in garlic mixture and chopped olives and stir well to
combine. Serve immediately.
