This is an easy method for making a simple, but delicious side dish out
of tomatoes. The amount of the ingredients will vary, based on your
taste, and how many tomatoes you use. Make it with just one tomato,
or several, depending on your needs. It keeps for several days in the
fridge.
Cut tomatoes into bite-sized chunks. Place in a bowl, and add, to
taste: olive oil, vinegar, minced garlic or onion, salt, pepper, a little
sugar if you like, and fresh chopped herbs. Stir, and ideally, let it sit for
at least an hour before serving.
