Turnip greens are traditional southern fare and most commonly served
as a side. Salad turnips can be eaten raw or cooked. They can come in
either white or red. We love to slice them into fresh salads or snack on
them raw. Try them with other dipping vegetables to update the
traditional vegetable platter. They can also substitute for traditional
turnips in most recipes and are delicious baked, mashed or roasted.
The tops are also great in sautés and soups. For best quality in storage
remove the tops from the roots, and store separately.They are
excellent when sautéed with butter, salt, and lightly dressed with
vinegar. Turnip greens are the best source of calcium among the
cooking greens and are also good sources of beta-carotene, vitamin C,
E, and B, and iron. A side of turnip greens is the perfect
accompaniment for pork and other southern style meat dishes.
