Acorn squash is easy to prepare. Just use a large knife, and cut it
in half from the stem end. Lightly coat the open sides with olive
oil, place facing down on a baking pan, and bake at 350 until it
cuts easily with a knife. Then scoop the flesh, and mash with
brown sugar and butter, or use the squash halves as edible bowls
for a filling of grains or veggies.
Butternut squash, when baked like other squash, make excellent
single servings when cut in half, cooked until soft, then served
with butter and maple syrup.
